These baked granola bars are my favorite snack right now! They’re filling, delicious and they travel well making them perfect for my husband to bring to work as his snack for the day.
I grew up eating granola bars for a snack. I used to enjoy all the different flavors that would come in a variety pack.
As much as I enjoyed all of those granola bars though, these baked granola bars are so much better. And an added bonus is that making them yourself allows you to know exactly what’s in them and makes the flavor options truly endless.

I’ve been making these bars two-three times a week for months now and I don’t see myself stopping anytime soon. That’s how much we enjoy them!
These baked granola bars are made with ingredients that you most likely already have in your pantry and use regularly.
So let’s get into it!

Ingredients
2 cups of oats. I like to use the organic sprouted oats.
1/2 cup of flour. I use organic all-purpose flour.
1 cup of your favorite chocolate chips. My personal favorite is dark chocolate, but any will be just as good.
1/4 cup of pumpkin seeds. This is optional, but I love to add these for extra nutrients. These are the pumpkin seeds that I’ve been using.
A pinch of salt. My favorite salt to use is Redmond’s Real Salt.
A sprinkle of cinnamon.
A splash of vanilla.
1 egg.
1/2 cup of avocado oil or another neutral oil.
1/4 cup of honey. Local honey is the best, but use whatever is available to you.
1/4 cup of maple syrup.
Making the Granola Bars
Mix all of the dry ingredients together in a large bowl. Oats, flour, chocolate chips, pumpkin seeds, salt and cinnamon.

Add the vanilla, egg, oil, honey and maple syrup to the dry ingredients and give it all a good mix.
Spread the mixture into a 9 by 13 pan lined with parchment paper.
Bake at 350 degrees for about 30 minutes. You want it to brown a little.
Let cool.
They can be cut into squares or bars. Either way you’ll get about 8-10.
I store them in a glass container that we keep easily accessible on the counter.

Have Fun and Experiment with Different Flavors!
There are so many different ways that you can change up these granola bars!
Here are some ideas to try. If you have another idea, I’d love to hear about it!
Play around with different chip flavors. Peanut butter chips and chocolate chips would be really good together.
Raisins or some other dried fruit would be great in these. I have tried dried cranberries and they are delicious in these granola bars!
I’ve even added chopped up pecans, but you could probably do walnuts too.
For the sugar, you could do all honey or just maple syrup. Or you could even sub one or both for brown sugar.
For some added nutrients, you could add in about a 1/2 cup of ground flaxseed.
For some extra chocolate (because you can never have too much chocolate, right? Right!) you could add a chocolate drizzle to the top. Or maybe caramel?
The possibilities really are endless.
