We’ve really been enjoying these maple pecan overnight oats. They’re the perfect make-ahead breakfast for an early morning or whenever you want!

Although by now everyone knows the convenience of overnight oats, we only recently discovered how great they are. Overnight oats really have become a popular make-ahead breakfast in this fast-paced world and they’re all over Pinterest. And no wonder why! It’s so easy to prep several at one time and then let them do the rest of the work in the fridge.
How We Do It
Overnight oats are our favorite for after Sunday morning Mass. We have a little routine to prepare for every Mass. I’ll prep the overnight oats on Saturday evening and the next morning, Colby packs them in a lunch box with spoons and some ice packs to keep them cold and then loads them in the car.
On a normal week, I’ll just make two jars. One for me and one for Colby to enjoy after Mass. Sometimes though, I’ll make several jars at a time depending on what the upcoming week looks like. Some examples of when I might make several jars are weeks with a holy day of obligation or weeks where we have a lot of road time planned.
Overnight oats are a great idea to have on fasting days as well. They’re light enough to count as a snack, but they have enough nutrients in them to still help you get through the day. I plan on making these maple pecan overnight oats several times throughout the upcoming Lent.
Whenever I make these oats, I make an assembly line of my jars. I find this to be the best way to make multiples. It’s so easy to line up however many jars I need and just go down the line with each ingredient.
Another convenience that makes overnight oats so great is that the possibilities are quite literally endless. You really can make any flavor! The milk and the oats are the must haves, but everything else is up to you!

Maple Pecan Overnight Oats
Ingredients
1/2 cup oats. I like using organic rolled oats.
1/2 cup milk. Any milk should do fine, I use organic cow’s milk.
1 tbsp pure maple syrup. I use organic maple syrup that I’m able to find at Costco.

1 tbsp yogurt. Regular or Greek yogurt will work. I prefer to use regular yogurt.
1/4 tsp vanilla. I use organic vanilla extract.
1/4 tsp cinnamon
Handful of roughly chopped pecans. Use as much or as little as you want.

Directions
Add all of your ingredients to a jar, shake it up well and put it in the fridge overnight. That’s it!

These are the measurements for one serving size. To make multiples, just make an assembly line of whatever containers you’re going to use. This is my preferred method, and it makes it so easy! You could also double, triple, or whatever amount you need, place everything in a bowl, mix it all up and then split it up into your containers.
Variations
Now that you’ve given the recipe a try, here are some ideas to mix things up.
Switch out the maple syrup for some honey and give honey pecan oats a try!
Or use brown sugar and you have brown sugar pecan oats.
You can swap out the pecans for walnuts or leave out the nuts altogether.
The yogurt can be switched out to milk kefir if you prefer.
And the cinnamon or the vanilla could be left out entirely.

Notes
Make as many as you need at one time. They should last up to a week in the fridge.
