Two full weeks of Lent are already behind us and Laetare Sunday which is the halfway point is next week. Let’s get this next week of Lent started off today with the third Sunday of Lent.

Weekly Lenten Check In
How was your week? What were the positives? What are you going to be working on this coming week?
I feel pretty good about this past week overall. I accomplished a lot of reading while staying on top of our snacks and meals.
I hope to accomplish more spiritual reading this coming week as well as being more diligent with certain homemaking tasks that certainly aren’t my favorite tasks.
A good example of these certain tasks would be cleaning the bathrooms. I don’t know about you, but that has got to be my least favorite thing to do.
Meal Ideas for Lent or for Whenever
Here are some of the meals and snacks that we enjoyed this week.
Broccoli and cheddar quiche and crockpot black bean tacos were our meatless meals for the week.
Quiche is one of my favorite ways to fix eggs. It’s really simple and yet seems so elegant.
The black bean tacos are always a hit with my Mexican cuisine-loving husband. Those tacos are also a simple meal since they cook in the crockpot which is great for our busy days.
We also enjoyed some chicken pot pie this week. This meal is a good one that really stretches and we love doing the biscuits on top instead of the traditional pie. I use this recipe from Farmhouse on Boone.

Pizza also made it on the menu this week. Every family knows the hit that pizza always is and it really hit the spot for us this week.

As for our snacks, we had two different kinds of granola bars this week. A staple recipe and a new recipe.
We didn’t care too much for the new recipe, so we won’t be adding it to our recipe collection. Let me know if you have a great granola bar recipe to share!
I made a double batch of biscuits from the chicken pot pie, so we used those extra biscuits as a snack.
And of course we had some overnight oats. This week’s flavor was blueberry. You can get that recipe here.

Various Mass Prayers from the Third Sunday of Lent
I like to share prayers from the Mass of the day. I know as moms we don’t really get to read them during Mass, so this is a great way for me to get to appreciate and gain something from them.

“My eyes are ever towards the Lord: for He shall pluck my feet out of the snare: look Thou upon me, and have mercy on me; for I am alone and poor. Ps. To Thee, O Lord, have I lifted up my soul: in Thee, O my God, I put my trust, let me not be ashamed.”

A Few Parting Thoughts
Take just a couple of minutes to think about what this week might look like and what needs to be done spiritually.
Remember, keep it simple.
